Bagels con frittata di bietole e salmone affumicato: il nostro pranzo al sacco è pronto per esser gustato!
La primavera si sta facendo attendere, ma noi non ci fermiamo:le gite fuori porta del fine settimana sono un toccasana!!!
Non so voi, qui quando si tratta di uscire di casa, a meno che non sia previsto un pranzo in un ristorante, è fondamentale per la sopravvivenza della famiglia avere un panino già pronto… Diciamo che siamo d’appetito e che preferisco evitare tragedie in macchina seguite da urla che farebbero invidia anche a Tarzan.
A questo giro ho optato per dei bagels farciti con frittata di bietole salmone affumicato spinacini crudi e formaggio splamabile. A noi piacciono molto e ogni volta cambiamo la farcitura.
Ingredienti (6 bagels):
6 bagels
350 g bietola cotta Le Cotte
5 uova
1 spicchio d’aglio
300 g salmone affumicato
Formaggio spalmabile q.b.
Sale e pepe q.b.
Olio extra vergine di oliva q.b.
Limone (opzionale)
Spinacino fresco opzionale
In una padella antiaderente fate rosolare uno spicchio d’aglio schiacciato, aggiungete le bietole e lasciate insaporire per 2 minuti. Aggiustate di sale e pepe. Sbattete le uova in una terrina, trasferiteci le bietole saltate e versate il tutto nella padella antiaderente. Cuocete la frittata da entrambi i lati (aiutatevi con un coperchio o un piatto per ribaltarla). Una volta che si sarà raffreddata, tagliatela con un coppapasta della misura dei bagels.
Dividete a metà i bagels, spalmate il formaggio su entrambi i lati, farcite con la frittata e qualche fettina di salmone affumicato (opzionale condirlo con qualche gocciolina di limone) e dello spinacino fresco.

I don’t know about you, here when it comes to leave the house, unless we are expecting a lunch in a restaurant, it is crucial for the survival of the family to have a sandwich ready… Let’s say that we are hungry and I prefer to avoid tragedies in the car followed by screams (that would envy Tarzan too) to have a lunch box full with me in my bag!
I opted for bagels stuffed with omelette of smoked salmon, raw spinach and spreadable cheese. We like them a lot and every time we change the filling.
Ingredients (6 bagels):
6 Bagels
350 g cooked chard
5 eggs
1 clove of garlic
300 g smoked Salmon
Spreadable Cheese to taste
Salt and pepper to taste
Extra virgin olive oil to taste
Lemon (optional)
Optional Fresh Spinacino
In a non-stick frying pan, brown a crushed clove of garlic, add the Swiss chard and leave to gain flavor for 2 minutes. Fix salt and pepper. Whisks the eggs into a bowl, transfer the sautéed beet and pour it into the non-stick pan. Cook the omelette on both sides (Help yourself with a lid or a plate to tip over). Once it has cooled, cut it with a bagels measure coppapasta.
Divide the bagels in half, spread the cheese on both sides, stuffed with the omelette and some slices of smoked salmon (optional seasoning with a few drops of lemon) and the fresh Spinacino.
